Pierogi From Scratch

I am sharing this recipe for pierogi from scratch because I am sick of you buying frozen pierogi. Make your pierogi from scratch, it’s easy! This is a recipe for the dough, but let me know if you need help with fillings and I will post some ideas! Before you start: make the filling. You don’t want the dough to dry out while the meat is cooking and cooling!

Pierogi From Scratch

Ingredients:

  • 3c flour, sifted
  • 1 c warm water
  • 1 egg, lightly beaten
  • 1 1/2 t salt

Directions:

Making your pierogi dough from scratch takes some energy, so I skip the gym the day I make these. Just kidding, I never go to the gym. First, mix flour with salt. Add the egg and continue mixing with your hands. Slowly drizzle in water and kneed until dough becomes elastic and smooth. It’ll take some time, about 15 minutes. The dough should be smooth but not hard.

Roll out the dough to about 2mm thickness. This part takes some energy as well, so maybe have some chocolate before you start. Then, to cut out your pierogi use a glass or a cup to cut circles out of the dough. Fill with your desired fillings, like meat and cheese (I call these cheeseburger pierogi!), some cabbage with mushrooms, sweet farmers cheese or mushrooms/onions and spinach. Boil, then pan fry if you like them crispy, like I do! Serve with some fried onions and sour cream. If you’re making sweet pierogi like blueberry or apple, serve sprinkled with sugar and caramel. So yummy!
